Ingredients

800g pork ribs
4dried Chinese mushrooms
1bulb garlic
1packet (35 grams) herbal Bak Kut Teh spice
litres water
10g dried shrimp
6dried chillies
1medium onion
6cloves garlic (peeled)
5ladies’ fingers
1tbsp oyster sauce
1tsp sweet dark soya sauce
tsp ground white pepper
2tbsp oil
Sauce:
1tbsp sweet dark soya sauce
2tsp light soya sauce
½tsp sugar
½tsp salt

Directions

1.

Blanch 800g pork ribs in a pot of boiling water for 5 minutes. Drain and transfer to claypot.

Add to claypot 4 dried mushrooms, 1 bulb garlic, bak kut herb bag and 1½ litres water.
Mark as complete

Bring to boil and simmer on low heat for 45 minutes uncovered.
Mark as complete

Add in sauce ingredients and continue to simmer until liquid is almost dried out. Set aside until needed.

Wash 10g dried shrimp and chopped coarsely.
Mark as complete

Cut 5 ladies’ fingers diagonally into 0.5cm thick slices.
Mark as complete
7.

Peel and cut onion into quarters and separate the layers.
Mark as complete

Cut 6 soften dried chillies into 5cm lengths.
Mark as complete

Heat 2 tbsp oil.
Mark as complete
10.

Fry chopped dried shrimp until fragrant
Mark as complete

Add in dried chillies, onion and garlic and stir fry until fragrant.
Mark as complete
12.

Add cooked pork ribs, 1 tbsp oyster sauce and 1 tsp sweet dark soya sauce.
Mark as complete
13.

Add ladies’ fingers and stir fry until it’s cooked.
Mark as complete
