30g soaked white fungus | |
6pitted Chinese red dates | |
½egg white |
Directions
1.
Prepare a small ceramic double boiler.
Mark as complete

Soak dried fungus till its fully bloomed. Using a scissor, cut little pieces out of it.

Place 30g of the cut soaked white fungus, 6 red dates and pour into the ceramic double boiler.

Double boil for 20 mins.

Quickly pour in ½ of the egg white and give a gentle stir.

You will see the egg white bloom and strands moving in a circle.

Serve hot or cold.
