Belacan Fried Chicken
Happy Hari Raya Aidilfitri to our Muslim friends!
We have a treat for you should you be a fan of Belacan and it’s a really easy recipe. By marinating the chicken with belacan, it infuses so much flavor to the chicken that makes it so sedap and shiok when eaten. We also used a double fry technique to ensure more crispiness in the chicken.

8pairs chicken wings and drumlets | |
50g belacan (shrimp paste) | |
½tsp white pepper powder | |
1tsp coriander powder | |
1tsp sugar | |
½tsp salt | |
4tbsp oil | |
Oil for deep frying |
Directions
1.
Add 50g belacan, ½ tsp white pepper powder, 1 tsp coriander powder, 1 tsp sugar, ½ tsp salt and 4 tbsp oil to a pestle and mortar.
Mark as complete

Mix and grind the ingredients into a paste

In a large mixing bowl add 8 pairs chicken wings and drumlets and the belacan paste

Mix well and rub the paste into the chicken.

Let it marinate for 1-2 hours.

Deep fry the chicken wings until light brown, remove and drain

Let chicken wings rest for 1 minute.

8.
Turn the heat for the oil up slightly and add the chicken wings to the oil again
Mark as complete
9.
Once they are golden brown, remove and drain
