Rice Cooker Recipes

If you’ve spent hours in the kitchen, you’ll know that whipping up a feast is no easy feat. The yummy dishes are worth it in the end – but on some days, even we just want to kick back and take it easy too.

Here we have 7 beginner-friendly and fuss-free recipes that are super easy to make. They’re perfect for lazy days, new cooks, or even someone with two left hands. All you need is one tool that’s already in your kitchen: the rice cooker.

1. Tomato and Pork Rice

This tomato and pork rice recipe is a quick and healthy meal that’s tasty and easy to prepare. All you have to do is grab some of your preferred vegetables, chop up some proteins (we used pork belly) and leave the rest to your rice cooker.

We utilised some good ol’ lap cheong in our recipe to extract its distinct sweet flavour, which zhngs up the flavour of the rice.

With a quick preparation time of 30 minutes for a sizable portion, this is the perfect recipe for meal preps.

2. Scallops Rice

Do you know that you can cook seafood in a rice cooker too? I didn’t either. If you fancy your meal with some flavours from the sea, you have to give our Scallops Rice a shot.

The combination of juicy prawns, pork belly and fresh scallops gives the rice a rich umami flavour that’s bound to satisfy even the pickiest eater. We also have a secret tip for you – preserve the oil from frying the garlics and shallots, and add that as a final touch before you set the rice cooker working. The easy step will add an extra oomph to the dish, don’t say we never share!

3. Yam Rice

Combine traditional tastes with modern methods in this Yam Rice  recipe. A childhood memory and household staple for many, you can now easily recreate this dish with ease, with the help of your handy rice cooker.

Fry the yam cubes lightly before placing them in the cooker, in order to bring out its full flavour. Don’t forget the other key players of this dish; the diced shrimps, mushrooms and chinese sausages, which complement and enhance the flavour of the yam rice.

Easily serving 5-6 pax, this recipe could be just what you need to impress in your next family gathering!

4. Chicken and Rice with Mushroom

Now, this is the Chicken and Rice with Mushroom recipe for your extra lazy days. Despite minimal effort and ingredients needed, be assured that the taste factor of this dish is in no way compromised.

We used chicken thighs in our recipe as it is the most tender part of a chicken, but feel free to switch it up to chicken breasts for an even healthier option. You can also add vegetables of choice, like the chye sim.

Cabbage also tastes fantastic cooked in this style, such as in this 20-minute cabbage rice recipe that you can check out too.

5. Claypot Rice

Craving for some claypot rice but don’t own a claypot? Good news, your rice cooker can also produce that perfect brown colour and charred taste with a little trick!

It’s actually more simple than you might think; just pre-fry all the ingredients in a wok before you add them into the cooker with rice! Do set aside some time to marinade the chicken meat, which varies from 1 hour to overnight, depending on your preference. We included salted fish in our recipe to make the rice extra savoury, but feel free to modify or opt out of it if you are not a fan.

6. Lei Cha (Hakka Thunder Tea Rice)

When we talk about healthy eating, this Lei Cha recipe, also known as Thunder Tea Rice, can’t be excluded. The wide array of vegetables that accompany the brown rice serve as excellent providers of nutrients such as vitamins and dietary fiber.

Healthy eating doesn’t necessarily come at the expense of taste— there is a reason why lei cha is famous among all ages alike! Try it for yourself, and it definitely isn’t difficult to when this dish can be easily accomplished with any rice cooker.

7. Chicken Rice

Hainanese chicken rice is classic local delicacy greatly loved by Singaporeans, but have you tried recreating it at home? While the signature dish may seem difficult to prepare, it can be easily done with a rice cooker.

Simply soak plain rice with some aromatics (ginger, garlic, spring onion) and chicken stock in a rice cooker, and you’re on your way to enjoying delicious seasoned rice!

A pro-tip would be to only add in the marinated chicken wings to the cooker when the rice is almost cooked, so that the wings would not be overcooked. This helps to retain the full flavours from the wings and prevent overcooking.

Bonus: Chicken Rice Chilli Sauce

Not forgetting the iconic chilli sauce in every chicken rice meal, we have included a short recipe on how to make this sauce that everyone just can’t seem to get enough of.

The spicy, sweet and tangy sauce reduces the grease from the chicken rice and creates a perfect balance between the flavours in the entire meal. If you are serving children or less spice-tolerant eaters, do adjust the amount of chili padis used accordingly.
