It’s that time of the year again where parties and potlucks abound. Now that pandemic regulations allow for small gatherings, the festive potluck spirit is back — and with it comes the headache of deciding what to bring. 

Whether you’re the potluck king/queen or a newbie trying to figure out a signature dish, we’ve got plenty of ideas for you to try this Christmas. Here are 6 potluck recipes that’ll fit in any potluck party and who knows, even wow the crowd.

1. Red Wine Oxtail Stew 


Given the rainy days and cooler December weather, a hot bowl of stew is always welcome at the dinner table. Make a big version of this delectable oxtail stew to fill the tummies of your dinner guests, and they’ll be coming back for seconds. 

The flavour doesn’t disappoint either, with the savoury and soft seared oxtails, paired with the celery and carrots coated in a tantalising red wine glaze. You’ll be surprised at what a simple sauté and 45 minutes in the pressure cooker can give you! For the best meal, ask a friend to bring mashed potatoes to the party to pair with this stellar dish.

2. Fried Prawns with Wasabi Mayo

Even if you only have an hour left before the party, this super simple yet show-stopping potluck recipe is a foolproof dish. Think golden brown and crispy prawns dipped in flavourful and spicy wasabi mayonnaise. Being super easy to eat, this dish is great for parties and potlucks where the less hassle a dish is, the better. 

Here’s a tip: To prevent your guests and yourself from feeling too oily, a little lemon zest or squeeze of lemon juice can go a long way. Squeeze it over the prawns and the sauce right before serving for the best results.

This dip is light and creamy, contrasting well with the hit of spice that comes with every bite of the buffalo wing. The dip also goes well with raw veggies like carrots and celery, so do prepare those on the side if you have vegetarian friends to entertain too. 

That said, as the chef, you get to decide what to create and how much spice to add. If there are more kids or adults who can’t eat spicy food at the potluck party, perhaps just a touch less of the sauce will suffice for these delicious buffalo wings.

4. Korean Style Marinated Pork Belly Slices


No (K)drama here with this straightforward yet unique recipe. With layers of tender and juicy pork belly, this dish will be the talk of the town at your potluck. What’s more, the ingredients such as the meat marinade and kimchi are easily found in any Korean supermarket, making this dish an easy option.

To cut through the oiliness, you can use fresh lettuce to serve as a wrap. If you’re feeling up for it, you can also bring toppings like roasted garlic, chilli sauce or extra kimchi for a complete DIY wrap.

5. Pork Roll with Black Garlic Stuffing

Continuing our pork dishes is this Western take on sio bak, which will definitely be an outstanding dish at a potluck party. Challenge yourself with this recipe which will give you and your friends a good taste of crispy pork skin together with tender meat and a delicious black garlic stuffing. 

The star of the dish is the Porchetta, which you can find at the deli section of supermarkets. Do take care to plan ahead as this recipe is best made when your Porchetta is scored, salted and left to refrigerate overnight. This process draws out the moisture, giving you that signature crunch of the pork skin that is sure to please.

What they don’t know is that this recipe will take you only one hour – and without an oven.
