Shakshuka – 北非蛋

If you’re an egg lover, you’ll be delighted by today’s recipe. Shakshuka: Some say it is the ultimate breakfast or brunch dish! It is a staple dish overseas, traditionally served up in a cast iron pan with bread to mop up the sauce.

Shakshuka is a dish of eggs bathed in tomatoes, paprika, onions and it is often spiced with cumin. A medley of delightful flavours worth craving for as a meal or appetiser!

Ingredients:

  1. ¼ cup Marigold Evaporated Milk - King Of Kings 

  2. 1 tbsp olive oil

  3. 50g yellow onions (diced)

  4. 10 g garlic (minced)

  5. 30g small red bell pepper (diced)

  6. 400g canned diced tomatoes

  7. 1 tbsp tomato paste

  8. 2 tsp paprika

  9. ½ tsp cumin

  10. ¼ tsp chilli powder

  11. Salt and pepper to taste

  12. 3 eggs

  13. 40g feta cheese

  14. parsley (chopped)

  15. Toasted bread

Steps:

  1. Pre-heat oven to 180°C.

  2. Heat 1 tbsp oil in a deep sauté pan on medium heat. Sauté 50g yellow onions until translucent.

  3. Add in minced garlic, continue to sauté until fragrant.

  4. Add in diced red bell pepper, sauté until softened.

  5. Add in 1 tbsp tomato paste sauté for a minute.

  6. Add in diced tomatoes, 2 tsp paprika, ½ tsp cumin, ¼ tsp chilli powder, Marigold Evaporated Milk - King Of Kings, salt and black pepper to taste. Cook for 5 to 7 minutes until the sauce is thick.

  7. Make 3 little indentations ,making sure to evenly space it over the delicious spicy tomato sauce. Crack eggs, one at a time, directly into it. Sprinkle feta cheese around the eggs.

  8. Bake in the oven at 180°C for 8 – 10 mins depending on each and individual oven performance.
