Samsui Chicken – 三水姜蓉鸡

*take not not heat the oil overly high as it will burn the ginger and cause bitterness in the sauce.

Samsui chicken is a popular dish found in local Soup Restaurant chain in Singapore. It used to be a luxurious dish in the past. Eaten by the samsui women usually only once a year. The use of sesame oil and ginger sauce is believed to be able to rid the body of excess wind.

Some may ask, what’s the difference between this dish and Hainanese chicken. Let us tell you. This time round, the emphasis is not on the chicken but the To-DIE-For ginger sauce! You might have guessed. The secret to making a KILLER ginger sauce to add chicken fat to it!

The best way to devour this delicacy is to serve it with a slice of lettuce. The contrast of the refreshing and crispy lettuce cuts through the heavy ginger sauce making it light and delectable.

  1. 1 Large chicken

  2. 50g sliced old ginger

  3. 5 stalks spring onion

  4. 1 litre chicken stock

  5. enough water to cover chicken

  6. 2 tbsp salt (adjust to taste)

  7. 1 cucumber

  8. 1 iceberg lettuce

  9. Ginger sauce

  10. 30g old ginger

  11. 80g young ginger

  12. 3 cloves garlic

  13. 1 tbsp hua tiao wine (optional)

  14. 1 tbsp light soy sauce

  15. 50ml sesame oil

  16. 30ml chicken oil (obtained from melting chicken fats)

  17. 2 tbsp sugar

  18. 1 tbsp chicken powder (optional)


  1. Add 1 litre chicken stock to a pot of boiling water

  2. Add 2 tbsp salt and bring to boil

  3. Add 50g sliced old ginger and 5 stalks spring onion

  4. Add 1 large chicken to pot, make sure there is enough water to cover it

  5. Bring to boil and simmer for 10 mins

  6. Turn off heat and let it rest in the pot for 45 mins

  7. To make ginger sauce, blend 30g old ginger, 80g young ginger, 3 cloves garlic, 1 tbsp hua tiao wine (optional) and and 1 tbsp light soy sauce

  8. Blend until smooth and transfer to bowl

  9. Heat 50ml sesame oil and 30ml chicken oil in a pan

  10. Once the oil starts to smoke add it to the ginger paste

  11. Add 2 tbsp sugar and 1 tbsp chicken powder (optional)

  12. Mix well and set aside

  13. Cut cucumbers into slices and lay it out in a ring

  14. Remove chicken from pot and cool it down with ice water

  15. Cut chicken into serving size

  16. Serve with ginger sauce
