Ingredients:

  1. 500g cooked rice (preferably overnight)

  2. 50g salted fish (diced)

  3. 120g chicken breast (diced)

  4. 20g garlic (minced)

  5. 2 eggs

  6. 2 tsp light soya sauce

  7. 1 tsp fish sauce

  8. ½ tsp pepper

  9. 30g spring onion (chopped)

  10. 100g bean sprouts (topped and tailed)

  11. 2 tbsp oil

  12. Oil for deep frying

Steps:

  1. Heat oil and fry 50g salted fish until crispy. Dish out and set aside.

  2. Heat 2 tbsp of oil in a wok and scramble 2 eggs.

  3. Once cooked, add in 20g minced garlic and stir fry for 1 minute.

  4. Add in 120g diced chicken breast and stir fry until cooked.

  5. Add 500g of cooked rice.

  6. Season with 2 tsp light soya sauce, 1 tsp fish sauce and ½ tsp pepper.

  7. Stir fry until all the rice grains are separated.

  8. Addin the crispy fried salted fish, 100g beansprout and 30g chopped spring onion.

  9. Stir fry it for 1 minute and serve.
