Sago cake is a dish that is so delicious yet so difficult to make! There are many different variations of it, but we made ours in single portions where the sago holds together better and easier to handle. We decided to make it 3 layers, with a later with gula melaka in the center which we find tastes the best. The flavour of pandan and sweetness from the gula melaka mixed with the texture of sago is just a match made in heaven. Best served with a cup of tea at midday.

Add 20 pieces of pandan to 200ml of water and blend. Strain the mixture and squeeze to extract pandan leaf juice.

Boil 1.5l of water in a pot and add 200g of sago pearls, cook over medium heat for 5 minutes and stir constantly. Turn off heat and cover for 20 minutes.

Add 250g of Gula melaka, and 80ml of water to a pot, heat and stir until gula melaka is melted. Set aside.

Add 1l of water and 100g of sago pearls to a pot , cook over medium heat for 5 minutes and stir constantly. Turn off heat and cover for 15 minutes.
