Sago Cake with Gula Melaka – 椰糖西米糕

Sago cake is a dish that is so delicious yet so difficult to make! There are many different variations of it, but we made ours in single portions where the sago holds together better and easier to handle. We decided to make it 3 layers, with a later with gula melaka in the center which we find tastes the best. The flavour of pandan and sweetness from the gula melaka mixed with the texture of sago is just a match made in heaven. Best served with a cup of tea at midday.

Ingredients:

    Pandan layer:

    1. 200g small sago pearl

    2. 120g shredded coconuts

    3. ½ tsp salt

    4. 60g coconut milk

    5. 200ml pandan juice (20 pieces of pandan leaves + 200ml of water)

    6. ⅛ tsp green colouring

    7. 70g caster sugar

    8. Ingredients

      Gula melaka layer:

      1. 100g small sago pearl

      2. 50g shredded coconuts

      3. 250g gula Melaka block

      4. ¼ tsp salt

      5. 30g coconut milk

      6. 80ml water

      Steps:

      1. Add 20 pieces of pandan to 200ml of water and blend. Strain the mixture and squeeze to extract pandan leaf juice.

      2. Boil 1.5l of water in a pot and add 200g of sago pearls, cook over medium heat for 5 minutes and stir constantly. Turn off heat and cover for 20 minutes.

      3. Strain off as much water as possible and add into a mixing bowl. Add 200ml pandan juice, shredded coconut, coconut milk, sugar, salt and green colouring.

      4. Mix well and set aside for 30 minutes.

      5. Add 250g of Gula melaka, and 80ml of water to a pot, heat and stir until gula melaka is melted. Set aside.

      6. Add 1l of water and 100g of sago pearls to a pot , cook over medium heat for 5 minutes and stir constantly. Turn off heat and cover for 15 minutes.

      7. Strain off as much water as possible and add into a mixing bowl. Add gula melaka syrup, shredded coconut, coconut milk and salt.

      8. Mix well and set aside for 30 minutes.

      9. Strain pandan sago mixture, and fill 5 oval moulds with pandan mixture to the ⅓ mark, press layer down.

      10. Steam for 10 minutes.

      11. Strain gula melaka sago mixture, Fill next layer with gula melaka sago mixture until ⅔ mark. Steam for another 10 minutes.

      12. Fill moulds to the brim with pandan sago mixture and steam for another 10 minutes.

      13. Remove and set aside.

      14. Use a knife to loosen sides to release Sago cake. Garnish with shredded coconut.
