Roast Duck Breast with Truffle Stuffing

Duck is a lovely poultry, and we’ll be using this for our Xmas recipe today!

We start off by making slits in the centre of the duck breasts. We then stuff them with our truffle stuffing. Armed with roasting shield and rack, we use our trusty Weber Q Grill and roast the meat at 200°C for 20-25 minutes.

Check the internal temperature with Weber’s instant read thermometer, when it is 58°C, remove from grill and set aside. Use the remaining stuffing for roast as well, with grilled tomatoes and asparagus too. Slice the duck and serve your wonderfully cooked Xmas feast for your loved ones!

Ingredients:

  1. 6 Duck breast

  2. Salt and pepper to taste

  3. 50g butter

  4. 100g chopped shallots

  5. 150g swiss brown mushroom

  6. 1-2 tbsp worcestershire sauce

  7. 2 tbsp brandy

  8. 5 sprigs thyme

  9. zest from 1 orange

  10. juice from ½ orange

  11. 40g panko bread crumbs

  12. 120g truffle paste

  13. extra breadcrumbs for stuffing crust

  14. olive oil

  15. 2 vines cherry tomatoes

  16. 6 stalks white asparagus

  17. Mixed salad optional

Steps:

  1. Make a slit in the centre of duck breasts for stuffing, season with salt and pepper. Set aside for 10 minutes.

  2. Over the Weber Q grill, heat a pan on high heat. Add butter, and saute chopped shallots until caramalised.

  3. Add swiss button mushrooms and season with salt and pepper. Stir fry until mushrooms are soft.

  4. Add worcestershire sauce and brandy and to reduce. Add thyme, zest of orange and juice. Mix well and transfer to a mixing bowl

  5. Add panko bread crumbs and truffle paste and mix well.

  6. Stuff duck breast with truffle and mushroom stuffing, press duck to fill stuffing tightly. Drizzle olive oil over stuffed duck breasts

  7. With roasting shield and tray, preheat the Weber Q Grill to 200°C for 10 minutes.

  8. Roast stuffed duck breasts in grill at 200°C for 20-25 minutes. Check the internal temperature with Weber’s instant read thermometer, when it is 58°C, remove from grill and set aside.

  9. Add remaining stuffing into a baking tray. Cover with bread crumbs and drizzle with olive oil.

  10. Drizzle olive oil and season with salt and pepper for cherry tomatoes and white asparagus. In the grill roast stuffing until bread crumbs brown, and grill tomatoes and asparagus until slightly brown.

  11. Slice stuffed duck breast and serve over mixed salad.
