Mee Rebus – 马来卤面

Mee Rebus is a popular hawker dish amongst many of us in both Malaysia and Singapore. What makes this unique dish is the combination of yellow noodles with it’s thick and spicy gravy. While we all know how tasty this gravy is, what’s surprising is that the consistency of the sauce comes from mashed sweet potatoes, awesome right?

Ingredients

  1. Gravy

  2. 8 red chillies

  3. 12 shallots

  4. 8 cloves garlic

  5. 6 candle nuts

  6. 20g turmeric

  7. 20g galangal

  8. 50g dried shrimp (soaked) in hotwater)

  9. 200ml chicken stock

  10. 100ml oil

  11. 2 tbsp meat curry powder

  12. 4 tbsp tau cheo

  13. 800 ml chicken stock

  14. 4 cups mashed boiled sweet potatoes (yellow)

  15. 1 cup ground roasted peanuts

  16. 2 tbsp sugar (adjust to taste)

  17. 1 tsp salt (adjust to taste)

  18. Per portion

  19. 200g yellow noodles

  20. 40g bean sprouts

  21. Toppings

  22. 1 hard boil egg

  23. ½ green chili slice

  24. 20g fried shallots

  25. 40g fried tauhu

  26. 2 calamansi

  27. 2 ladle of gravy

  37. 100ml oil

  38. 2 tbsp meat curry powder

  39. 4 tbsp tau cheo

  40. 800 ml chicken stock

  41. 4 cups mashed boiled sweet potatoes (yellow)

  42. 1 cup ground roasted peanuts

  43. 2 tbsp sugar (adjust to taste)

  44. 1 tsp salt (adjust to taste)

  46. 200g yellow noodles

  47. 40g bean sprouts

  49. 1 hard boil egg

  50. ½ green chili slice

  51. 20g fried shallots

  52. 40g fried tauhu

  53. 2 calamansi

Instructions

  1. Add 8 red chillies, 12 shallots, 8 cloves garlic, 6 candle nuts, 20g tumeric, 20g galangal, 50g dried shrimp (soaked) and 200ml chicken stock to blend into a smooth paste

  2. Add 100ml oil to pot, then add the chili paste and stir fry till fragrant

  3. Add 2 tbsp meat curry powder, 4 tbsp tau cheo, and 800ml of chicken stock

  4. Stir in 4 cups mashed sweet potatoes and 1 cup ground roasted peanuts

  5. Add 2 tbsp sugar and 1 tsp salt to taste

  6. Simmer for 30 mins

  7. Blanch 200g yellow noodles with 40g bean sprouts

  8. Serve noodles with gravy

  9. Add 1 hard boiled egg, 40g fried tauhu, 20g fried shallots, 1/2 green chili (sliced)

  10. Add 8 red chillies, 12 shallots, 8 cloves garlic, 6 candle nuts, 20g tumeric, 20g galangal, 50g dried shrimp (soaked) and 200ml chicken stock to blend into a smooth paste
