Lobster Roll

When it comes to looking lobsters, the live ones make a world of difference! We chose to create our own lobster roll this time. It’s a super simple recipe that brings out the sweetness of your key ingredient, the lobster.

There’s nothing worse than to overcook the lobsters. By dipping the lobsters in iced water to stop it from overcooking, the tenderness of the meat is retained. And instead of slathering mayonnaise all over, we used MARIGOLD Low Fat Yogurt as the base of the sauce. The mixture of yogurt, lemon juice and dill give it a refreshing taste.

Paring toasted butter rolls and a touch of black pepper, this makes the perfect brunch item!

  1. 1 tbsp salt

  2. Pot of water

  3. 3 tbsp MARIGOLD Low Fat Yoghurt

  4. 20g chopped chives

  5. 20g chopped celery leaves

  6. 5g fresh dill

  7. Salt & black pepper to taste

  8. Juice from ½ a lemon

  9. 4 hotdog buns

  10. 20g melted butter

  11. Lemon slices

  12. Mix Carol lettuces


  1. Cook 2 fresh lobster in for 12-18 mins depending on size

  2. Dip cooked lobster in ice water to stop it from cooking

  3. Remove lobster meat from shells to a large mixing bowl

  4. Add 3 tbsp MARIGOLD Low Fat Yoghurt

  5. Add 20g chopped chives, 20g chopped celery leaves and 5g fresh dill

  6. Season with salt & black pepper to taste

  7. Add Juice from ½ a lemon and mix well

  8. Spread hotdog buns with melted butter

  9. Toast on grill pan

  10. Add lobster mixture to toasted buns

  11. Serve with lemon slices and mixed carol lettuces
