Guinness Stout Ribs – 黑啤排骨

Another awesome pork ribs dish with bold flavours! If you love stout, look no further!

First, we fry the pork ribs to crispy perfection, while the inside stays moist and sticky. The use of stout in both the marinade and sauce gives the ribs “body” while also imparting a slight bitterness to it.

Ingredients

  1. 600g pork ribs

  2. 100 ml guinness stout

  3. 2 tbsp oyster sauce

  4. 1 tbsp light soy sauce

  5. 1 tsp sugar

  6. ½ tsp white pepper

  7. ½ tsp salt

  8. 2 tbsp tapioca starch

  9. Oil for deep frying

  10. Sauce

  11. 1 cup guinness stout

  12. 2 tbsp light soy sauce

  13. 2 tbsp oyster sauce

  14. 2 tbsp ketchup

  15. 1 tbsp sugar

  16. 600g pork ribs

Instructions

  1. Cut 600g pork ribs into individual ribs

  2. Marinate ribs with 100 ml guinness stout, 2 tbsp oyster sauce, 1 tbsp light soy sauce, 1 tsp sugar, ½ tsp white pepper and ½ tsp salt

  3. Mix well and let it marinate for 1 hour

  4. Add 2 tbsp tapioca starch and mix well

  5. Heat enough oil in wok, deep fry ribs until golden brown

  6. Drain and set aside

  7. To a wok add 1 cup guinness stout, 2 tbsp light soy sauce, 2 tbsp oyster sauce, 2 tbsp ketchup and 1 tbsp sugar

  8. Mix well and let it thicken slightly

  9. Add fried pork ribs

  10. Toss and coat pork ribs with sauce
