Five Spice Calamari with Wasabi Mayo – 芥末鱿鱼圈

Wasabi mayo typically goes with prawns. BUT this time round we decided to pair it with one of our FAVOURITE BEER FOODS – Calamari!

Other than the usual salt and pepper, we added five spice powder to the batter which imparts a more sophisticated flavour to the dish.

Last but not least, the recipe for this HOT, REFRESHING and TANGY wasabi mayo dipping sauce goes well with so many dishes and will make you want more!

*Note* To get the calamari to really crispy – fry them in small batches!

Ingredients

  1. 3 large calamari aka squid (skinned and cleaned)

  2. 1 stalk spring onion (chopped)

  3. Oil for deep-frying

  4. Batter

  5. ¾ cup cornstarch

  6. ¼ cup plain flour

  7. 1 tsp five spice powder

  8. ½ tsp salt

  9. ¼ tsp pepper

  10. 1 egg

  11. ¼ cup water

  12. Wasabi mayo

  13. ½ cup japanese mayo

  14. 20g wasabi (adjust to taste)

  15. 2-3 tbsp honey (adjust to taste)

  16. 1 tbsp light soy sauce

  17. Juice from ½ a lemon

  28. ¼ cup water

  29. Wasabi mayo

  30. ½ cup japanese mayo

  31. 20g wasabi (adjust to taste)

  32. 2-3 tbsp honey (adjust to taste)

  33. 1 tbsp light soy sauce

  34. Juice from ½ a lemon

Instructions

  1. Skin and remove insides from 3 large calamari

  2. Cut calamari into rings

  3. To make batter sift ¾ cup cornstarch, ¼ cup plain flour, add 1 tsp five spice powder, ½ tsp salt, ¼ tsp pepper, 1 egg and ¼ cup water

  4. Mix well and add in calamari rings

  5. Coat the squid rings with the batter evenly

  6. Heat enough oil in a wok, deep-fry calamari rings until golden brown

  7. Drain and set aside

  8. To make wasabi mayo, mix ½ cup japanese mayo, 20g wasabi (adjust to taste), 2-3 tbsp honey (adjust to taste), 1 tbsp light soy sauce and Juice from ½ a lemon

  9. Mix well and set aside,

  10. Drizzle 2 tbsp of wasabi mayo over the fried calamari rings

  11. Sprinkle chopped spring onions and toss evenly

  12. Serve with lemon slices and wasabi mayo
