Chicken Orange Soba Noodle Salad

Healthy eats need not necessarily be bland tasting, and by mixing some zesty flavours from MARIGOLD 100% Juice we’ve created a wholesome mason jar salad recipe that can be cooked, packed and shared with your loved ones.

We decided on the use of mixing soba noodles with orange teriyaki chicken for that balance between your meat and greens. With a combination of an orange zesty chicken and carrot-ey dressing for the soba noodles, this is good tasting experience for the whole family!

  1. 180g soba noodles

  2. 1 cup julienned carrots

  3. 1 cup long beans, finely chopped (Blanched)

  4. 1 cup cucumber, peeled, seeds removed, thinly sliced

  5. ½ cup thinly sliced red cabbage

  6. 3 stalks of spring onions

  7. 2 tsp toasted sesame seeds

  8. 1/2 cup fresh coriander, finely chopped

  9. 1/2 cup MARIGOLD 100% Orange Juice

  10. 1/3 cup teriyaki sauce

  11. 4 boneless chicken thighs

  12. Dressing:

  13. 2 tablespoons soy sauce

  14. 2 tablespoons mirin

  15. 1/4 cup MARIGOLD 100% Carrot Juice

  16. 1 tbsp lime juice

  17. 1 kaffir lime leaf (finely chopped)

  18. 1 garlic clove (finely chopped)

  19. 1 tsp grated ginger with juice

  20. 1 tsp sesame oil

  21. 3 tbsp grapeseed or olive oil


  1. Combine MARIGOLD 100% Orange Juice, teriyaki sauce, and 4 boneless chicken thighs in a plastic bag and let it marinade for at least 12 hours

  2. Grill chicken in pre heated oven at 180 degrees celsius for 30 minutes

  3. let the chicken cool and slice thinly

  4. Cook the soba noodles in hot water.

  5. Drain and place noodles into an ice bath for 2 minutes.

  6. Mix together all of the dressing ingredients in a jar

  7. Drain noodles and mix them with the dressing

  8. Mix all the vegetables in a bowl

  9. Layer your dressed soba noodles in the mason jar, vegetable mix, the chicken and a sprinkling of sesame seeds

  10. Cap mason jar and store in fridge
