Braised Sea Cucumber with Duck – 海参鸭

Closing in on CNY, we are thrilled to share this recipe for one of our favourite comfort foods – Braised Duck with Sea Cucumber!

If you’re a fan of braised dishes, you’ll love to try this one – the magic truly happens when you braise the sea cucumber in dark soy sauce and the duck, the combined flavour with the sauce makes it the ideal dish for repeat servings together with your bowl of white rice.

Ingredients

  1. 1kg Sea Cucumber (fresh / rehydrated)

  2. ½ a braised duck

  3. 3 duck gizzards

  4. 200g roasted pork belly

  5. 6 Chinese mushroom (rehydrated)

  6. 2 tbsp oil

  7. 1 tbsp minced garlic

  8. 1 tbsp minced ginger

  9. 4 tbsp dark soy sauce

  10. 2 tbsp light soy sauce (adjust to taste)

  11. 2 tbsp oyster sauce

  12. 1 litre chicken stock

  13. 60g rock sugar

  14. 2 tbsp hua tiao wine

  15. fresh coriander for garnish

  16. 1kg Sea Cucumber (fresh / rehydrated)

  26. 2 tbsp oyster sauce

  27. 1 litre chicken stock

  28. 60g rock sugar

  29. 2 tbsp hua tiao wine

  30. fresh coriander for garnish

Instructions

  1. Add 1 tbsp minced ginger to wok with 2 tbsp oil

  2. Add 1 tbsp minced garlic

  3. Stir fry until fragrant

  4. Add 200g roasted pork belly,

  5. 6 Chinese mushroom (rehydrated),

  6. and 1kg Sea Cucumber (fresh / rehydrated)

  7. Stir fry until fragrant

  8. Add 4 tbsp dark soy sauce,

  9. 2 tbsp oyster sauce,

  10. and 2 tbsp light soy sauce (adjust to taste)

  11. Mix well and transfer to pressure cooker

  12. Add ½ a braised duck with 3 duck gizzards,

  13. 1 litre chicken stock,

  14. 60g rock sugar,

  15. and 2 tbsp hua tiao wine

  16. Cook in pressure cooker for 25 mins

  17. Garnish with fresh coriander and serve
