Black Garlic Chicken Soup – 黑蒜鸡汤

Most of us have heard largely about how black garlic, also known as “black gold” has great benefits for us. In this recipe we decided to do something nutritious – so we made a simple, healthy and delicious chicken soup with it!

The sweetness from the black garlic along with a whole chicken, dried scallops and chicken herbs gives the soup a nice savoury flavour and also warms your body and soul! This is a great soup recipe for the keeping, do give it a try!

Ingredients:

  1. 1 chicken (1kg)

  2. 10 dried scallops

  3. 10 clove black garlic

  4. 20g dried lily flowers

  5. 20g wolfberries

  6. 4 red dates

  7. 15g chinese yams (huai shan)

  8. 25g codonopsis root (dang shen)

  9. 2 liters water

  10. Salt to taste

Steps:

  1. Soak dried scallop in boiling water for 15 minutes.

  2. Remove black garlic from bulb.

  3. Cut chicken into smaller pieces.

  4. Blanch chicken in a pot of boiling water for 2 minutes. Strain and transfer to clay soup pot.

  5. Add in all the dried herbs, black garlic, dried scallops with the soaking water, and 2 litres of water.

  6. Bring to boil and add salt to taste.

  7. Lower the heat and let it simmer for 2 hours.

  8. Serve hot when ready.
